This is the simplest of springtime pleasures — the kind of recipe that feels like a quiet sigh of joy. You don’t need fancy tools, just a hot oven, a shallow tray, and a handful of golden-skinned Jersey Royals. Crisp, salty jackets. A warm, nutty interior. It’s not showy. It’s just perfect.

This technique is more delicate than your usual roastie approach — we’re not chasing fluff, we’re leaning into the buttery charm of the Jersey Royal. Shake them just enough to loosen their jackets, then roast hot and fast. Coconut oil works beautifully here for high heat and a hint of richness, but use olive oil if preferred.

- No need to peel — the skins are part of the charm
- You can scale up the recipe easily, just don’t overcrowd the tray
- A baking tray with low sides works best for even browning

- If they’re too pale — give them another 5–10 minutes at 220°C
- If they’re sticking to the tray — wait 2 more minutes before trying to turn them
- If they’re falling apart — reduce parboil time next time to 6 minutes

Drawn from British springtime traditions, this is a simple tribute to one of the UK’s most beloved seasonal vegetables. Jersey Royals have PGI status and are grown exclusively on the island of Jersey. Their nutty flavour and waxy texture come from the island’s unique soil and sea breeze climate.
Ingredient Focus: Jersey Royal Potatoes
Jersey Royals are tiny seasonal treasures with a short UK window — usually April to June. Their skin is paper-thin, and their flesh buttery and sweet. Grown only on the island of Jersey, they are Protected Geographical Indication (PGI) certified, and loved for their delicate flavour and smooth, waxy texture. A true harbinger of British spring.

My Favourite Way To Eat
On a warm day, eaten outside in a patch of sun with a smear of garlicky broad bean hummus, a wedge of lemon, and maybe a single cold beer. Georgia at my feet, belly-up. I don’t even need a plate — just a napkin, some fingers, and someone to laugh with.

📝 Oven-Roasted Jersey Royal Potatoes Recipe

Oven-Roasted Jersey Royal Potatoes
These crisp-skinned, golden-fleshed Jersey Royals are a love letter to spring. Parboiled, shaken, and roasted in coconut oil, they’re salty, nutty, and satisfyingly simple. Ideal alongside vibrant greens or your favourite tofu dish — they’re a reminder that less really can be more. A short-season treasure best enjoyed while the sun’s coming back.

Ingredients
- 400 g Jersey Royal Potatoes
- 1.5 tbsp deodorised coconut oil
- 3 pinch salt
Instructions
- Put 2 tbsps of deodorised coconut oil into a wide shallow baking tray, and put the tray into the centre of the oven. Preheat the oven to 200℃ fan (220℃ conventional).400 g Jersey Royal Potatoes, 1.5 tbsp deodorised coconut oil
Parboil the potatoes
- Put the potatoes into a pan, cover with water, bring to a rolling boil. When at a rolling boil, boil for 7 minutes and drain into a sieve. Once drained and dry, put back into the pan, add a lid, and vigorously shake to loosen the jackets of the potatoes. You will not make the same type of impression as on a fluffy Maris Piper for regular roast potatoes, but it shaking them does help loosen them up a little.
Roast the potatoes
- Bring the hot tray of fat out of the oven. Put it down, don't hold it aloft. Carefully add the potatoes to the hot fat. When they're all in, roll them around in the fat so the entire potato is covered. They like a roll!
- Dress with some pinches of salt and put into the oven for 10 minutes. Bring them out of the oven and turn each potato over. Then return to the oven for a further 10 minutes.Bear in mind that you might want their jackets a little darker than you see in the photo.3 pinch salt
