Oven-Roasted Jersey Royal Potatoes

These crisp-skinned, golden-fleshed Jersey Royals are a love letter to spring. Parboiled, shaken, and roasted in coconut oil, they’re salty, nutty, and satisfyingly simple. Ideal alongside vibrant greens or your favourite tofu dish — they’re a reminder that less really can be more. A short-season treasure best enjoyed while the sun’s coming back.

Ingredients
  

  • 400 g Jersey Royal Potatoes
  • 1.5 tbsp deodorised coconut oil
  • 3 pinch salt

Instructions
 

  • Put 2 tbsps of deodorised coconut oil into a wide shallow baking tray, and put the tray into the centre of the oven. Preheat the oven to 200℃ fan (220℃ conventional).
    400 g Jersey Royal Potatoes, 1.5 tbsp deodorised coconut oil

Parboil the potatoes

  • Put the potatoes into a pan, cover with water, bring to a rolling boil. When at a rolling boil, boil for 7 minutes and drain into a sieve. Once drained and dry, put back into the pan, add a lid, and vigorously shake to loosen the jackets of the potatoes. You will not make the same type of impression as on a fluffy Maris Piper for regular roast potatoes, but it shaking them does help loosen them up a little.

Roast the potatoes

  • Bring the hot tray of fat out of the oven. Put it down, don't hold it aloft. Carefully add the potatoes to the hot fat. When they're all in, roll them around in the fat so the entire potato is covered. They like a roll!
  • Dress with some pinches of salt and put into the oven for 10 minutes. Bring them out of the oven and turn each potato over. Then return to the oven for a further 10 minutes.
    Bear in mind that you might want their jackets a little darker than you see in the photo.
