Ingredient Focus: Firm Tofu

A quiet block of potential — absorbent, blank, waiting for flavour and flame.

Fridge

Storage whisper: Keep unopened tofu in the fridge and use by the date on the packet. Once opened, submerge in water in a sealed container and change the water daily — it’ll keep fresh for 3–5 days. Can be frozen, though the texture will become spongier.

Available year-round; not a seasonal ingredient.

What Firm Tofu Brings to the Table

Firm tofu is the dependable cornerstone of many plant-based dishes. With its subtle flavour and porous texture, it’s built for marinating, crisping, grilling or gently braising. When cooked properly, it turns golden, chewy, and deeply satisfying.

It’s high in protein and versatile enough to stand in for meat, cheese, or eggs — but it isn’t trying to be any of them. Tofu is tofu. And once you start treating it as a beloved ingredient in its own right, it gives back richly.

How To Use

  • Press and marinate in soy sauce, garlic and ginger, then pan-fry or grill
  • Crumble and sauté with spices as a scramble alternative
  • Add cubed to stir-fries, curries or soups
  • Slice and bake with olive oil and herbs for a chewy savoury topping
  • Skewer and glaze with hoisin or BBQ sauce for a smoky main

Flavour Pairings

Waste Less

If you’ve opened a block but only used half, store the rest in fresh water and use in a miso soup, noodle bowl, or quick stir-fry. Leftovers can also be crumbled into a tofu mayo or blended into a savoury dip.
