This dish was the bestseller on my home delivery menu throughout lockdown. It was inspired by my travels in Vietnam some years ago. Some of my customers, both meat eaters and plant-based peeps, have fallen in love with tofu because of this dish. It’s got such a tasty umami sticky caramelised sauce… this is pan-fried tofu with green beans, pepper, red onion petals and garlic slices. Just squeeze your lime wedges over and tuck into a big wollop of protein topped with coriander and spritzy lime!
By making this dish, you will acquire and practice the following skills:
- Press, slice, and fry tofu to achieve a firm, golden crust that soaks up sauce.
- Season in stages for even flavour.
- Judge the “rise” of cooking tofu by eye rather than fiddling.
- Caramelise sugar and soy into a glossy, sticky sauce.
- Balance richness with lime and coriander, and introduce smoky notes with liquid smoke.
- Stir-fry vegetables for colour and bite, finishing with cornflour slurry for gloss.
