My home is shared with AirBnB House Share guests. I’ve met countless amazing people. I met two Palestinian sisters who were lovely and we chatted about their food and they warmly invited me to their home in Palestine. They’d brought some homemade cookies with them which were just gorgeous… They told me about Musakhan amongst other dishes and here is my version. I created this dish, sat down and ate it and loved it. I hope you enjoy it too.
By making this dish, you will acquire and practice the following skills:
- Make a seasoned batter and fry cauliflower so it’s crisp, golden, and light.
- Char aubergine slices without oil for flavour and structure.
- Cook onions with sumac and spices until sweet, tangy, and aromatic.
- Deglaze a pan with lemon juice to lift and brighten flavours.
- Layer flatbread with hummus, vegetables, herbs, and almonds for balance in texture and taste.
