By making this dish, you will acquire and practice the following skills:

  • Caramelise onion, garlic, and ginger slowly to build a deep base.
  • Wash and prepare lentils properly for clarity of flavour.
  • Balance spices (cumin, coriander, turmeric) with careful heat control.
  • Cook lentils until soft but with integrity, avoiding mush.
  • Adjust with lemon juice and salt at the finish for balance.
  • Turn dhal into soup by adjusting liquid and thickening with cornflour if needed.
  • Store and freeze dhal while preserving flavour and texture.
