Happy Days Puff Pastry Wellington

This is a perfect centrepiece for a family meal, or you could make it for just you and enjoy slice by lovely slice as you work your way through a week. It’s really soft inside and utterly rich and delicious. After practicing it, I gave it away to vegan friends with tall teenagers and the verdict was a bunch of beautiful tulips as thanks and the comment was, ‘absolutely delicious, thank you very much; we devoured everything.’

By making this dish, you will acquire and practice the following skills:

  • Cook lentils to retain bite, forming part of a structured filling.
  • Sweat onions and garlic slowly with salt to create a flavour base.
  • Use a Magimix to process nuts and mushrooms for the right texture.
  • Caramelise with vinegar before reducing mushrooms and cashews to deepen flavour.
  • Season and build a filling that combines soy, herbs, and gravy browning for depth.
  • Rest the filling fully before wrapping to prevent soggy pastry.
  • Handle puff pastry correctly: rolling, sealing, scoring, and glazing for a golden finish.
  • Cook evenly, rotating to avoid oven hot spots.
