Game Changer Scrambled Tofu

This is Game Changer for a reason. I took the usual version and wondered if it could be improved and it can, and it is, and here for you is my way to cook creamily gorgeous scrambled tofu. Fluffily light and oh-so-tasty, this has to be right up there in terms of the dishes that we, as plant-based people, must have up our sleeves. I doubt there’ll be much left but if there is, just leave it to cool, pop into the fridge and use as a sandwich filler later, possibly binding it up a little bit with vegan mayo and maybe even a little curry powder!

By making this dish, you will acquire and practice the following skills:

  • Dice onion, garlic, and pepper to consistent size for even cooking.
  • Cook peppers slowly with paprika to develop a Spanish-style sofrito base.
  • Make a quick “buttermilk” by curdling soya milk with apple cider vinegar.
  • Combine tofu with cornflour, nutritional yeast, turmeric, and kala namak for authentic egg-like flavour.
  • Cook scramble gently like an omelette before breaking into curds.
  • Balance creamy tofu with smoky peppers and fresh spring onions.
  • Serve on sourdough or use cold as a sandwich filler.
