Blea Tarn Patatas Bravas (cooked outdoors with Georgia)

Rain or shine, it is beautiful outside in Mother Nature’s spaces and places. Georgia found an off-the-beaten-track space for us to enjoy cooking our version of a classic Spanish dish: Patatas Bravas. We used the Squeaky Bean chorizo and love the chewy texture of it, along with the potatoes that we brought in cooked and ready to use. By making this dish, you will acquire and practice the following skills:

  • Slice onions into petals and cook slowly outdoors for sweetness.
  • Build base flavour with garlic, rosemary, paprika, oregano, and chorizo.
  • Combine cooked potatoes, beans, and tomatoes for bulk and balance.
  • Make a sharp “salad” dressing with vinegar, oil, syrup, and seasoning.
  • Finish dish with lemon juice and dressing for brightness.
  • Plate with avocado, tomato, and fresh salad leaves for colour and contrast.
  • Adjust seasoning balance to prevent the dish becoming oily.
  • Use outdoor heat control to keep ingredients cooking evenly without burning.
