Bill Granger has inspired me for a long time. I love his fresh food and the apparent simplicity of the dishes he creates. I was lucky enough to house-swap to Sydney and I made a beeline for ‘Bill’s’ to eat his famous sweetcorn fritters. In addition to these crunchy fritters, I like the wetness of the tomato and cucumber salad, contrasting with the crunchiness of the polenta.
