Bill Granger’s Sweetcorn Fritters

Bill Granger has inspired me for a long time. I love his fresh food and the apparent simplicity of the dishes he creates. I was lucky enough to house-swap to Sydney and I made a beeline for ‘Bill’s’ to eat his famous sweetcorn fritters. In addition to these crunchy fritters, I like the wetness of the tomato and cucumber salad, contrasting with the crunchiness of the polenta.

By making this dish, you will acquire and practice the following skills:

  • Blitz basil, walnuts, and oil into a fresh pesto with balance of earthy and sharp flavours.
  • Chop tomatoes and cucumber neatly for a refreshing side salad.
  • Make a simple dressing, balancing vinegar, oil, sweetness, and seasoning.
  • Prepare fritter mix in the Magimix, blending sweetcorn, tofu, onion, herbs, and spices to a chunky batter.
  • Shape fritters using polenta for a crisp exterior.
  • Fry fritters evenly on medium heat until golden and crunchy.
  • Plate thoughtfully with salad, pesto, leaves, and lemon zest for freshness.
  • Repurpose fritters as burger patties or make-ahead for reheating.
