Sticky Toffee Pudding

It’s a classic Lakeland pudding and a proper treat. Warm sponge with a warm toffee sauce, served with cold ice cream. It’s perfect and moreish and once you start eating it, you can’t stop yourself giving off little noises of pleasure… Make, eat and enjoy with family or simply freeze cut squares so you can enjoy the cake at any time, with or without the sauce and ice cream. A great cake in it’s own right!

By making this dish, you will acquire and practice the following skills:

  • Soften dates in hot water for sweetness and moisture.
  • Prepare a vegan “buttermilk” with soya milk and vinegar as wet base.
  • Combine dry mix with sugars and warming spices for sponge structure.
  • Blend fruit mixture into batter for a rich, spiced cake.
  • Bake sponge until risen and set, judging doneness by colour and touch.
  • Cook a quick toffee sauce by melting butter, sugar, syrup, and vanilla before adding oat cream.
  • Serve pudding hot with sauce and ice cream for contrast.
  • Store, reheat, or freeze pudding and sauce effectively for future use.
