What Damsons Bring to the Table
Damsons are tart, dusky plums with a character all their own. More hedgerow than high street, their sour edge mellows beautifully with heat, turning them into syrupy, wine-dark wonders. Whether tumbled into crumbles, simmered into vinegar, or stirred into a sticky sauce, they bring a mood — deep, rich, and a little untamed.
They’re also high in natural pectin, which makes them excellent for preserving. And while rarely eaten raw, they shine in slow-cooked recipes where patience brings out their plush, mysterious side.
How To Use
- Simmer into a sharp-sweet compote with maple or date syrup
- Bake into a crumble, galette or spiced traybake
- Combine with onions and vinegar for a fast damson chutney
- Make a thick damson sauce for roast roots or grilled tempeh
- Preserve in gin, vinegar or jam jars for the darker months
