Red Apple, Walnut, and Sultana Salad with Dried Lime and Clove Dressing

Crisp red apple, toasted walnuts, and sweet sultanas come together in this fresh yet warmly spiced salad. The dressing – a blend of extra virgin olive oil, apple cider vinegar, dried lime and clove – adds brightness with a fragrant twist. It’s simple to assemble and quietly full of personality.

Ingredients
  

Salad Ingredients

  • 1 unit red apple | chopped into dice
  • 1 tsp lemon juice
  • 40 g walnuts | roughly chopped
  • 40 g sultanas | if yours are dried out, soak for a time in water to plump!

Dressing Ingredients

  • 1 pinch salt | large pinch
  • 15 ml apple cider vinegar
  • 30 ml extra virgin rapeseed oil
  • 1 tsp dried lime | grated - grate the zest and chop the inside of the fruit really small
  • 1 pinch ground clove

Instructions
 

Make the salad

  • Chop the apple and place in bowl. Add the lemon juice (to stop the apple going brown) and toss the apple around to coat the pieces with the lemon juice. Then chop the walnuts into pieces and add to the apple; add the sultanas
    1 unit red apple, 1 tsp lemon juice, 40 g walnuts, 40 g sultanas

Make the dressing

  • Put salt and vinegar into a bowl and stir the salt into the vinegar to dissolve it. Then add the remaining ingredients and whisk to mix.
    1 pinch salt, 15 ml apple cider vinegar, 30 ml extra virgin rapeseed oil, 1 tsp dried lime, 1 pinch ground clove
  • Add some of the dressing to the salad; taste it a little as you go so you have an amount of salad dressing that's right for you.
