Golden Pickles No. 1: Kohlrabi

This crisp and crunchy kohlrabi pickle is brilliant jar of taste and texture – gently mustardy, a little sweet, and ready in a day. Inspired by Eastern European traditions, it brightens anything! Inside sandwiches, on top of anything, or used as a side. No canning, no faff – just a quick, fridge-stable pickle that’ll quietly transform your meals.

Ingredients
  

  • ½ unit kohlrabi
  • 200 ml water
  • 100 ml white wine vinegar
  • 50 ml rice vinegar
  • 50 ml apple cider vinegar
  • 2 tbsp soft light brown sugar
  • 2 tsp salt
  • 1 tsp yellow mustard seeds

Instructions
 

  • Ensure you have a glass jar with a metal lid clean and ready; it should have at least 500g capacity. Or you could use smaller jars. It's up to you! I used a jar that had been used for shop-bought sauerkraut (one of my guilty pleasures).
  • Peel the kohlrabi and slice thinly into matchsticks. Give yourself enough time to do this! Put the kohlrabi matchsticks into the jar.
    ½ unit kohlrabi
  • Put the listed ingredients into a pan and heat to a very low simmer. Simmer for 2 minutes, then take the pan off the heat and leave it to cool off for a few minutes before pouring over the kohlrabi.
    200 ml water, 100 ml white wine vinegar, 50 ml rice vinegar, 50 ml apple cider vinegar, 2 tbsp soft light brown sugar, 2 tsp salt, 1 tsp yellow mustard seeds
  • Leave everything to cool for 10 minutes before putting the lid onto the jar, and leaving it in the fridge for 2 hours or more.
